Olive Oil Cake

Ingredients

  • 1 ½ cups all-purpose flour

  • 1 teaspoon kosher salt

  • 1 teaspoon baking powder

  • ¼ teaspoon baking soda

  • 1 cup granulated sugar

  • 3 large eggs, room temperature

  • Zest of 1 lemon

  • 2 tablespoons fresh lemon juice

Instructions

  1. Preheat oven to 350 F. Grease and line a 9” round cake pan with parchment paper.

  2. In a large bowl, add the sugar and lemon zest. Using your clean fingers, massage the zest into the sugar to release the lemon oil

  3. Add the eggs, vanilla extract and whisk until mixture is light and fluffy.

  4. Now add the olive oil, lemon juice and yogurt. Mix everything together really well.

  5. In a separate bowl, sift in the dry ingredients : all purpose flour, baking soda, baking powder and salt. Create a well in the middle of the flour mix and add the wet ingredient mixture in.

  6. Mix until just combined. Be careful not to over mix

  7. Pour the batter into your greased and lined with parchment paper round cake pan.

  8. Place the pan on the middle rack and bake for about 35 minutes or until golden all over and when gently pressed , it springs back and a toothpick inserted in the center comes out clean.

  9. Once the cake is done, Allow the cake to cool for 10-13 minutes in the pan before inverting onto a wire rack to cool completely.
