Blue matcha tiramisu
Ingredients
4 egg yolks
½ cup sugar
8 oz mascarpone, room temperature
1 cup heavy cream
3 teaspoons matcha powder
6 oz hot water (not boiling)
1 package ladyfingers
matcha powder + spirulina powder (or butterfly pea powder) for dusting
Instructions
Using a hand mixer, whip egg yolks and half of the sugar until light and fluffy
In another bowl, whip heavy cream and the remaining sugar until medium peak is achieved
Add in mascarpone and continue whisking
Fold the cream/mascarpone mixture into the egg yolks until combined
In a deep bowl, sieve in 3 teaspoons matcha powder, then add 6 oz hot water. Use a bamboo or electric whisk and whisk until matcha is foamy
Quickly dip ladyfingers in the whisked matcha and lay them in a single layer in an 8x8 pan
Smooth half of the mascarpone cream mixture on top
Lay down another layer of ladyfingers and smooth the remaining cream mixture on top
Let chill in the refrigerator overnight. When ready to serve, dust matcha + spirulina powder mixture generously on top.
