Tiramisu Cookies
Ingredients
Cookies
1/2 cup soft butter
100 gr brown sugar
50 gr white sugar
1 egg
1 tsp vanilla
210 gr flour
3 tbsp espresso powder (I used King Arthur Baking)
1/2 tsp baking soda
1/4 tsp baking powder
1/2 tsp salt
Mascarpone frosting
80 mL heavy cream
110 gr powdered sugar
1 tub 8oz mascarpone at room temp
1 tsp vanilla extract
1/2 tsp salt
cocoa powder for dusting
Instructions
Preheat oven to 350F
Cream together butter and sugar until light and fluffy
Add egg & vanilla & beat to combine
Add remaining ingredients & whisk on low or use a spatula and fold to combine
Scoop into 1.5 oz balls. Bake on a lined baking sheet for 12-14 minutes
Let cookies cool while you make the mascarpone cream.
Whisk heavy cream & sugar until combined then add mascarpone, vanilla & salt. Beat until combined
Pipe frosting onto cooled cookies (or simply spread a spoonful on top).
Store in fridge and dust with cocoa powder when ready to enjoy
