Tiramisu Cookies

Ingredients

Cookies

  • 1/2 cup soft butter

  • 100 gr brown sugar

  • 50 gr white sugar

  • 1 egg

  • 1 tsp vanilla

  • 210 gr flour

  • 3 tbsp espresso powder (I used King Arthur Baking)

  • 1/2 tsp baking soda

  • 1/4 tsp baking powder

  • 1/2 tsp salt

Mascarpone frosting

  • 80 mL heavy cream

  • 110 gr powdered sugar

  • 1 tub 8oz mascarpone at room temp

  • 1 tsp vanilla extract

  • 1/2 tsp salt

  • cocoa powder for dusting

Instructions

  1. Preheat oven to 350F

  2. Cream together butter and sugar until light and fluffy

  3. Add egg & vanilla & beat to combine

  4. Add remaining ingredients & whisk on low or use a spatula and fold to combine

  5. Scoop into 1.5 oz balls. Bake on a lined baking sheet for 12-14 minutes

  6. Let cookies cool while you make the mascarpone cream.

  7. Whisk heavy cream & sugar until combined then add mascarpone, vanilla & salt. Beat until combined

  8. Pipe frosting onto cooled cookies (or simply spread a spoonful on top).

  9. Store in fridge and dust with cocoa powder when ready to enjoy
