Strawberry vanilla chantilly cake

Ingredients

Cake

  • 3 and 2/3 cups cake flour

  • 1 teaspoon salt

  • 2 teaspoons baking powder

  • 3/4 teaspoon baking soda

  • 1.5 cup softened butter

  • 2 cups granulated sugar

  • 2 tablespoons honey

  • 3 large eggs + 2 egg whites, room temp

  • 1 Tablespoon pure vanilla extract

  • 1.5 cup buttermilk, room temp

Chantilly cream

  • 1.5 cup heavy cream

  • 3/4 cup powdered sugar

  • 2 teaspoons vanilla extract

  • 1/2 cup mascarpone

For assembly

  • Strawberry jam

  • Fresh strawberries

  • Fresh thyme for garnish

Instructions

  1. Preheat oven to 350F

  2. Combine dry ingredients

  3. Cream together butter and sugar then add in eggs and vanilla

  4. With mixer on low, add dry ingredients & mix until just combined

  5. Pour in buttermilk and mix by hand, making sure there are no lumps

  6. Divide batter into (3) 8-in cake pans lined with parchment paper

  7. Bake for 25-30 minutes. Insert a toothpick into the cake, and if it comes out cream, the cake is ready.

  8. Let the cake layers cool completely so that it doesn’t melt the cream

  9. To make the cream, whisk all the ingredients together until stiff peaks form

  10. To assemble the cake, layer cake, then 1/3 of the cream, then jam. Continue in this order until complete.
